A Christmas Cookie Recipe


23 days until Christmas!!! One of the best parts of the days prior to christmas is the yummy desserts. KC and I were craving something sweet tonight, and the only thing in our apartment was a package of jello pudding. I had bought it to make a pie for thanksgiving, but never got around to making the pie. Thank goodness too, because I wasn't feeling up to baking anything tonight. Anyway, it got me thinking about cookie recipes, for future nights when we don't have a box of pudding and I have the energy to cook. Plus it is always good to have a cookie recipe handy around christmas time. So to contribute to those who are looking for a cookie recipe, here is my favorite:

Chocolate Crinkles

3 Beaten Eggs
1 1/2 cups sugar
4 squares (4 oz) unsweetened chocolate, melted (or use 12 Tbsp cocoa mixed with 4 Tbsp vegetable oil)
1/2 cup cooking oil
2 tsp. baking powder
2 tsp. vanilla
2 cups all-purpose flour
Sifted powdered sugar

Preheat oven to 375 degrees

In a mixing bowl combine beaten eggs, sugar, melted chocolate, cooking oil, baking powder, and vanilla. Gradually add flour to chocolate mixture, stirring til thoroughly combined. Cover and chill for 1 to 2 hours or til easy to handle.

Shape dough into 1-inch balls. Roll balls in powdered sugar to coat generously. Place 1-inch apart on a ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Cook cookies on a wire rack. If desired sprinkle with additional powdered sugar. Makes about 48 cookies.

  1. I'm loving your Christmas countdown. You are right, Chocolate Crinkles are serious the best cookies. Although my neighbor made me some U of U sugar cookies the other day, after they won the big game, and they were DELICIOUS. I freakin' love a good sugar cookie AND not the gross sugar cookies that Kent gets from the grocery story with a mondo layer of frosting.

  3. Crystal - first of all Lara should give the lesson. She has gotten it down pat. But I can teach what I know. Let's try to do it while I am in town. Creating your blog layout is too much fun. So let's do it.

    And Krick - I have to agree sugar cookies are delish. But I haven't found a good recipe to make at home. If you happen to see the neighbor grab the recipe for me. I would love to have it.
